2019 Shiraz/Cabernet Tasting Notes
Variety: 66% Shiraz – 34% Cabernet Sauvignon
Region: McLaren Vale
The Shiraz component for this wine came from our Block 2 Shiraz. The sand over clay soils on this block produce full bodied, textured, and richly flavoured Shiraz.
The Cabernet is grown by our wonderful neighbor Geraldine Amos. Geraldines block is on heavier soils that produce well balanced and high grade fruit.
The vineyard is managed all by hand and only organic practices are used.
The grapes from our vineyard are all handpicked in the early morning and fermented in a half tonne fermenter where it was hand plunged 2-3 times daily. No yeast is added so it undergoes a “wild ferment”, maceration on skins occuring for 10-12 days.The wine is then pressed off the skins, using a basket press, into 2, 3 and 4 year old French oak barrels to age for 16 months prior to bottling. Minimal fining and filtration are used.
Our Shiraz Cabernet has lifted aromas of dark berry fruits, mocha and spice. The palate is rich and generous, with black cherry, menthol and luscious fruit combined with fine tannins and excellent length.
